MORE MUD BALLS - By Jade

Chances are you probably have seen recent news reports, diets or ads raving about the latest super foods.

But what makes super foods so super..?

Super Foods are classic foods that offer a potent supply of phytochemicals such as antioxidants and nutrients such as Protein, Fibre, Essential Fatty Acids, Vitamins and Minerals.

There is an amazing array of Superfoods including Cacao, Goji Berries, Cranberry, Pomegranate, Chia Seeds, Acai, Macca, Kale and it’s easy to stock the pantry and fridge with the goodness of them. To be honest all unprocessed wholefoods should be considered “Super”… nuts, seeds, seasonal fruits and vegetables are all SUPER!

 

BUT..

 

Our favouite super food is our very own Mud Balls! Previously we have shared our orignial mud balls superfood reciepe for you to create at home.. and now we have two more yummy, easy reciepes to show you!

 

1. For the coconut lovers

MUD BALLS WITH COCONUT ON THE OUTSIDE

1 Cup of Medjool Dates (soaked until soft)

1/3 Cup of Slivered Almonds

1/3 Cup of Cashews

1/3 Cup of Macadamia

1/3 Cup of Cacao Powder

1/3 Cup of Coconut Oil (melted)

1/3 Cup of Shredded Coconut

1 pinch Salt

½ TSP vanilla

Sprinkle of Cinnamon

1 Tbspoon of Chia Gel (2 tsp of chia seeds with 2 Tbsp water to forma a gel)

 

Method

  1. Put all ingredients into Lou’s Food Processor in the order listed.
  2. Blend until it reaches a nice dough consistency (not too long).
  3. Scoop and roll balls firmly.
  4. Roll ball in extra shredded coconut.
  5. Set the Mud Balls in freezer for at least an hour and take out prior to serving.

Lou has said you get the best consistency if the mud balls are out of the freezer for 1 hour. Or 5 min in the microwave. These Mud balls will last for one week when stored in an airtight container in the fridge.

 

 

2. For the Cacao lovers

MUD BALLS WITH CACAO ON THE OUTSIDE

(This recipe is adapted from Lous Nut Free energy Ball recipe.. I just used cranberries instead of apricots and Maple Syrup instead of Honey to make the balls vegan)

1 Cup of Organic Pepitas

¾ Cup of Goji Berries (pre-soaked)

1 cup of cranberries

4 TBS of Cacao Powder

1 TSP vanilla essence

Sprinkle of cinnamon

1 TBS of Maple Syrup

1 Cup of Desiccated Coconut

 

Method

  1. Using Lous blending machine, start by blending the pepitas until crumbly.
  2. Next add all of the other ingredients and blend well.
  3. Scoop portions to roll into the small balls.
  4. Roll again in Cacao powder.

 

Because the balls are being stored and made in the same equipment there will be small amount of nut proteins in the two types of balls. I recommend not to eat with nut allergy.

These ball will last for one week when stored in an airtight container in the fridge.

Now all that’s left to do is enjoy them!
